Black garlic

Buying black garlic in bulk: whole bulbs, peeled cloves or paste?

The right black garlic format depends on who will prepare it next. Define usable yield, texture, ingredients and handling before approving a sample.

Choose around the next operation

Start with a practical question: will the buyer sell the bulb, serve individual cloves, or blend the ingredient into a recipe? Whole bulbs, peeled cloves and paste place different preparation tasks on the receiving team. A lower purchase price can be less attractive if the format adds labour, trimming loss or an extra processing step.

Do not assess black garlic by darkness alone. An experimental study published in Foods compared ageing protocols and measured differences in colour, hardness, moisture and composition. The purchasing implication is to define the properties you need and evaluate the proposed sample. A research result is not a specification for a supplier’s batch.

Whole bulbs: agree presentation and usable yield

For whole bulbs, identify single-clove or multi-clove garlic explicitly. Ask for a practical size or weight range, the permitted variation, skin condition and the handling of damaged pieces. Request photographs with a scale and open several bulbs during evaluation, rather than approving only the outside appearance.

If the bulbs will be peeled in your kitchen or factory, weigh the received sample and the usable portion after preparation. Record the procedure. Compare the resulting usable cost alongside labour and packaging needs. Do not assume that a visual sample demonstrates a guaranteed yield for every shipment.

Peeled cloves: inspect more than convenience

For peeled product, agree whether intact cloves or broken pieces are acceptable. Check residual skin, consistency of size, ease of separating pieces and behaviour during your intended preparation. Define what you mean by soft: suitable for slicing, spreading and blending can require different sample outcomes.

Include the actual working temperature in your trial notes. Evaluate the product after following its stated storage and handling instructions, and record how it performs when a pack is opened and used in your operation.

Paste: request the complete ingredient declaration

A product called black garlic paste should not be assumed to contain only black garlic. Ask for the complete formulation declaration, including any added water, oil, salt, sugar or other ingredients. If you require a single-ingredient product, make that an explicit quotation condition.

Agree how consistency will be checked. A spoon test, a flow test and a viscosity measurement are not interchangeable descriptions. State the sample temperature and method. Test the paste in your intended sauce, dressing or filling, with the mixing equipment and dosage that you plan to use.

Define storage and acceptance together

Request unopened storage conditions, handling after opening, pack size and the basis for the stated shelf life. Ask which product-specific measurements and microbiological documents support the proposed specification. Do not transfer storage assumptions from one black garlic format to another.

Where moisture and water activity are requested, keep them as separate items. The CSIRO technical reference hosted by USDA ARS explains that identical moisture content does not necessarily mean identical water activity. Your quality team should decide which measurements and limits are relevant to the product and application.

Build a sample decision that can be repeated

  • Record the format, batch code and date of evaluation.
  • Compare flavour, acidity perception, texture and colour in the intended food.
  • Note usable yield or dispensing performance where relevant.
  • Agree measurable tolerances and the documents needed for the commercial lot.
  • Confirm packing, destination and the expected order quantity.

Send Surge Garlic your intended application and preferred format. If you are choosing between bulbs, peeled cloves and paste, describe the preparation step you want to simplify so the sample discussion addresses that specific decision.
